Avocado Toast Bites

It's time to make Toufayan's extraordinary avocado toast bites, they're a great appetizer or a refreshing snack for friends and family!

Ingredients

1 Toufayan Bakeries flat bread
1 tbsp Olive oil
1 Ripened avocado
3 Slices of thick cut bacon, or pancetta
1 Hard boiled egg
Everything bagel seasoning, to taste
Chopped chives or parsley

Directions

Method
Pre-heat oven to 350F.

Brush olive oil on both sides of the flat bread and toast in the oven for about 8 minutes. Remove and allow to slightly cool.

As your flat bread cooks and cools, separate hard boiled yolk from white and chop them up each finely. Chop raw bacon or pancetta in thick pieces and fry until crispy. Set aside.

Assemble toast by spreading avocado evenly with a fork on flat bread. Top with chopped egg white and yolk, bacon bits, everything bagel seasoning and top with chopped chives.

Cut into wedges and serve as an appetizer.

Serves 2.


Chorizo Breakfast Pizza

Let's make Toufayan's ultimate chorizo flatbread pizza! A super simple and delicious breakfast or snack to kick off a great day!

1 Toufayan Bakeries flat bread
½ cup Raw ground chorizo or sausage of your choice
¼ cup Shredded Mexican-style cheese
Sliced pickled or raw jalapeño peppers
1 Large egg
12 tbsp Jarred salsa of your choice
Salt/pepper to taste
Chopped fresh cilantro as garnish

Directions

Method
Preheat oven to 375F and line a baking sheet with parchment paper.

Use a fork to spread raw chorizo on top of the flatbread and bake on your baking sheet, putting it in the oven until the chorizo is cooked, about 7-9 minutes or more. This depends on the strength of your oven.

Sprinkle cheese, jalapeño peppers and salsa throughout flat bread and crack an egg in the center. Season with salt and pepper and place back into oven until egg is cooked to your liking, about 5-12 minutes.

Sprinkle with freshly chopped cilantro and cut into 4 equal wedges before serving.

Makes 1 pizza.

Preheat oven to 300 degrees.

Cut or tear Toufayan Keto Pitas into small pieces, approximately 1-inch.

Place into a food processor and pulse for about 1-minute for fine breadcrumbs; less time if you’re looking for a more course breadcrumb.

Place on a sheetpan and bake for 10 minutes, stirring after 5 minutes; bake an additional 2-3 minutes or until the breadcrumbs are completely dry – watch carefully as they can burn quickly!

Allow to cool completely.

Place in an airtight container and store in the refrigerator for up to one week or freeze up to three months.

Method
Preheat your air fryer to 350 degrees F for 3 minutes. Lay one Toufayan Gluten-Free wrap on a cutting board and spray lightly with avocado oil. Oil side down, place the wrap into a 6-inch outer bowl and use your hands to press the wrap into a bowl shape. Spray the wrap lightly with avocado oil again and place the inner bowl on top of the wrap.

Place your prepared wrap set up into the air fryer and air fry for 3-minutes to set the bowl shape.

Open the air fryer and use tongs to remove the outer bowl leaving just the wrap and inner bowl; air-fry for another 2 to 3-minutes. Leaving the inner bowl acts as a weight and keeps air bubbles from forming in the center of the wrap. PLEASE NOTE: BOTH BOWLS WILL BE HOT-USE TONGS TO REMOVE!

If you’d like additional browning on the inside of the taco bowl, remove the inner bowl from the air fryer and flip the bowl over. Air-fry an additional 1-2 minutes, watching closely for your preferred crispness.

Fill with your favorite taco salad ingredients: ground taco meat, rotisserie chicken, steak, cheese, sour cream, salsa and avocado.

Cut and serve immediately.

Pre-heat oven to 425F and line a baking sheet with parchment paper.

Use a standard can or round cookie cutter to cut a hole in the center of the wrap.

In a small bowl mix mozzarella cheese with pesto until combined.

Place wrap on parchment-lined baking sheet and use a fork to poke holes throughout wrap to prevent it from swelling in the oven.

Spread and press down cheese evenly on the wrap. Place pepperoni slices throughout and bake in oven for 7-10 minutes, until crispy and bubbly.

Top with fresh chives and red pepper flakes.

Cut up part of a red bell pepper to create your bow, then cut and serve.

Makes 1 pizza.

Heat oil in a large skillet over medium high heat; add ground turkey, a pinch of salt, few grounds of pepper and cook until browned – about 3-5 minutes, making sure to crumble the turkey as it cooks; drain any excess fat

Stir in garlic, onion powder, ginger, coconut aminos, rice wine vinegar, sesame oil, fish sauce, sweetener, lime zest and lime juice; continue to cook for another 1-2 minutes

Place Toufayan Keto wrap on a cutting board or plate; place lettuce cup in the center of the wrap, fill with turkey meat, top with desired garnishes, fold the keto wrap together either taco or burrito-style and enjoy!

12 tsp Dijon mustard
12 tsp cranberry sauce
1 slice Swiss cheese, split in half (can sub Gruyere)
1 slice ham
1 slice turkey
Confectioner's sugar, for dusting

Directions

Method
Set panini press to high and heat for 5-minutes.

Cut Toufayan Pita in half.

Spread Dijon mustard onto one side of pita and 1-2 teaspoons of cranberry sauce onto the other side.

Assemble the pita in the following order: one-half slice of Swiss or Gruyere on top of the Dijon, followed by the ham, then the turkey and the remaining half slice of Swiss or Gruyere.

Place filled pita onto the bottom of the panini press, lower lid and bake for approximately 5-minutes or until grill marks appear and cheese has melted.

Dust sandwich with confectioner's sugar; serve immediately with more cranberry sauce on the side.

Homemade Pita Bread

Toufayan Homemade Pita

Pita, or pitta, bread is a staple Mediterranean and Middle Eastern dish. It’s a round flatbread typically served with a wide range of side dishes, dips, and mezze platters, including falafel, hummus, tzatziki, and more.

Ingredients

180 g Lukewarm water (about 105° - 110° F)
9 g Sugar
7 g Instant yeast
9 g Refined coconut oil OR extra virgin olive oil
6 g Sea salt

Directions

Method
Combine the warm water, sugar, and yeast with 90 grams of flour; whisk until blended and set it in a warm place for 15 minutes.
15 Minutes

Add the oil, salt, and an additional 90 grams of flour. Using a dough hook attachment, mix until the dough is soft and no longer sticks to the sides of the bowl.
NOTE: If the dough still sticks, add 45 grams of flour. With the mixer on low speed, knead on low for about 5 minutes.
5 Minutes

Scrape the dough onto a lightly floured surface, form it into a ball and place it into a lightly oiled bowl; roll the dough in the bowl to coat the dough surface with oil. Place the bowl in a proofing bag and let it rest in a warm draft-free area for at least 2 hours or until the dough has doubled in size.
2 Hours

Remove the dough from the bowl onto a lightly floured work surface and cut the dough into 6 equal pieces with a sharp knife. Using a food scale to weigh each piece will ensure they are equal in size.

Form each piece of dough into a small ball, pull the sides of the dough ball, and tuck the ends underneath. Set the balls two inches apart onto a parchment-lined pan dusted with flour; place the pan back into a proofing bag and allow the dough to rest for 30 minutes.
30 Minutes

Using a rolling pin, roll the dough balls into flat, round ¼-inch pitas and rest the dough for an additional 30 minutes.

Over medium-high heat, brush a cast-iron skillet with a small amount of oil; once the pan is hot, add each pita to the skillet and cook until the bread puffs and the bottom browns slightly (about 2 minutes). Flip and cook for 2 additional minutes.

Serve immediately, or store in an airtight container for 5-7 days.

Makes enough for ½ cup crema

Mix together: 4 ounces dairy-free yogurt, a pinch of salt and squeeze of lime juice; mix well and place in a squeeze bottle or dollop onto the top of the flatbread. For a bit of heat, add 1-2 teaspoons of chipotle in adobo sauce to the crema and blend well.

1 Toufayan pita, cut in half

Method
Pre-heat oven to 400 degrees F.

Line an 8-inch springform pan with parchment paper; set aside.

Tear or cut Toufayan Classic Pitas into pieces and process in a food processor until breadcrumb size; place breadcrumbs into a medium-sized bowl, add water and let sit for approximately 5-10 minutes until crumbs are soft and hydrated.

Add shredded mozzarella, oregano and egg; stir together until combined and spread evenly over the bottom of the pan – approximately ½-inch thick.

Spread dough with pesto.

Scatter artichoke hearts, sun-dried tomatoes, olives, spinach and purple onion evenly.

Sprinkle with feta and add mozzarella pearls or cubes.

Add pinch of red pepper flakes, if using.

Bake for 25 minutes; remove from oven, let cool for 5 minutes.

Release from pan, remove parchment, place on a board.

Cut and serve immediately.

Take 1 Toufayan wrap and cut a 4-5 inch circle from the center; set aside.

Ingredients

2 Toufayan Tortillas (your favorite)
Cooking spray
Hummus (your favorite)
1 tbsp Salami
0.50 tsp Olives
Dill pickles
3 Fruit
1 cup Cheese

Directions

METHOD:
Pre-heat oven to 425 degrees

Line a baking pan with foil, spritz with oil; set aside

Cut each tortilla into approximately 16 pieces each

Place pieces on foil-lined pan, spritz with a bit more oil

Bake for approximately 4 minutes, until crisp and golden; watch carefully as they burn quickly

Remove from oven, sprinkle with salt and set aside

TO MAKE THE BOARD:
Place hummus on one end of the board; add 2 sections of salumi at opposite ends leaving space in the middle of the board for the chips

Repeat with fruit and cheese

Fill small bowls with olives and pickles

Add chips to the middle of the board

Serve!


Chicken Gyro Lavash Overhead

Chicken Gyro Lavash

A sandwich packed with nutrients and protein for a hearty lunch or dinner!

Ingredients

3 Toufayan Lavash
1 lb Skinless chicken breast or tenders
½ tbsp Lemon juice
5 ½ tsp Olive oil
1 Clove garlic, minced
5 ½ tsp Mediterranean spice blend
¼ tsp Smoked paprika
Salt/pepper
1 cup Shredded lettuce
1 cup Cherry tomatoes, halved
¼ cup Red onion, thinly sliced
cup Tzatziki sauce

Directions

FOR THE CHICKEN:
Place the lemon juice, olive oil, garlic and spices in a large zipped bag; add chicken, zip bag and shake gently until chicken is coated. Marinate for at least 1 hour, turning the bag at 30 minutes – you can also marinate overnight.

Remove chicken from marinade, discarding marinade.

Pre-heat grill to medium, add chicken to grill and cook, turning occasionally until cooked through; internal temperature should reach 165 degrees F – about 8-10 minutes.

TO ASSEMBLE:
Fill each Toufayan lavash with lettuce, grilled chicken, red onion and tomatoes; add tzatziki, pinch salt/pepper, wrap and serve immediately!

1 Toufayan Tandoori Flatbread

¼ Cup Cubed Squash, roasted
2 Tablespoons Bacon, finely chopped

Directions

Cook squash and bacon; chop and set aside.

Spread ricotta evenly over the flatbread.

Add squash, bacon; sprinkle sage and top with cheese, salt/pepper.

Broil until cheese is melted – approximately 1-2 minutes.

Remove and sprinkle with remaining cheese.

Drizzle with olive oil if using.

Ingredients

1 Toufayan Gluten-Free Wrap
Cooking Spray (Avocado spray preferred)
Your choice dried herbs/spices; we used: Italian herb mix, Everything Bagel-style, Cinnamon-Sugar

Directions

Preheat oven to 400 degrees F.

Line a sheet pan with foil, spray with cooking spray; set aside.

Using a knife or a pizza wheel, cut the gluten-free wraps into 4 strips and then each strip into chip-size pieces.

Place on sheet pan and spritz lightly with cooking spray.

Bake for 3-4 minutes; watch carefully as they brown quickly!

Remove when golden and edges begin to brown.

Sprinkle with desired dried herb and/or spice mix.

Serve immediately.

1 Toufayan Wrap
tbsp Pesto Mayonnaise
1 cup Cup Baby Lettuce (approximate)
23 Slices of Turkey
2 Slices of Thinly Sliced Cheddar
12 Slices Wafer-thin Purple Onion (optional)

Directions

Spread Pesto Mayonnaise evenly on the Toufayan wrap.

Place lettuce in the center; add turkey, cheddar and onion.

Take the bottom of the wrap and fold up to the center.

Tuck in both right and left sides and continue to roll the wrap to the top of your board.

Seam side should be down.

Slice and serve!.

Ingredients

1 package Toufayan Gluten Free Wraps
1 lb ground turkey
8 oz package cream cheese
2 tbsp olive oil
1 small onion, chopped
1 can (15 oz.) stewed tomato
1 can (15 oz.) enchilada sauce
2 ears of fresh corn, cut from the cob
1 can (4 oz.) chopped green chilies, drained
½ tsp salt
¼ tsp pepper
2 cups shredded Jack cheese
fresh cilantro

Directions

Preheat oven to 350 degrees.

Brown turkey in oil with onion. Add tomato, enchilada sauce, corn, chilies, salt and pepper. Simmer for 5 minutes.

Pour 1/2 of the sauce into a 9x13 baking dish.

Spread cream cheese over half of each of the six tortillas. Fold each tortilla in half and lay across the baking dish, partially layering each.

Pour remaining sauce over the top.

Top with cheese and sprinkle with cilantro.

Bake at 350 degrees for 15 minutes or until the cheese is melted and tortilla edges crisp up.

Directions

In a medium bowl, mix ¼ cup of the Tikka sauce and the chopped chicken; set aside

Salsa:
Place all ingredients in a medium bowl and toss until mixed; set aside

Such an easy, quick meal from start to finish. Enjoy this fun favorite with any kind of Toufayan Wraps!

Ingredients

1 package Toufayan Gluten Free Wraps
1 lb ground turkey
½ cup chopped onion
2 cloves garlic, minced
1 tsp chili powder
1 can diced tomato (14.5 oz.)
1 cup ricotta cheese
½ cup shredded mozzarella
3 tbsp cilantro
½ cup shredded chedar
Salsa
Sour Cream

Directions

In a skillet, brown turkey with onion and garlic. Stir in chili powder and tomato. Simmer to heat through.

In a bowl, mix ricotta with mozzarella, 2T cilantro, salt and pepper to taste.

In a round baking dish, layer tortilla, meat, tortilla, ricotta, then repeat until ending with a tortilla. Top with cheddar, sprinkle with cilantro.

Bake at 400 degrees for 15 minutes or until the edges of the tortilla crisp up.

Top with salsa and a dollop of sour cream.

Method

Method
Whisk eggs, your choice of milk or water, salt, pepper until well blended; set aside

Melt butter in a non-stick skillet over medium heat

Add egg mixture and cook, moving egg mixture gently until it begins to set

Place 2 cheese slices on omelet, add broccoli, then the remaining 2 slices of cheese on top

Once the omelet has set and the cheese has begun to melt, fold both sides in towards the middle

Cut omelet in half and place each half into pita

Serve immediately

8 tbsp butter, melted

2 cups cooked turkey or chicken, shredded

1 red onion, thinly sliced (approximately 1/3 cup)
1 green onion, thinly sliced for garnish

Method
Set oven to Broil

Melt butter over a medium low heat in a small saucepan; whisk in hot sauce and garlic powder until combined. Pour half of the buffalo sauce over turkey and toss to coat. Set aside

Divide remaining buffalo sauce to each Toufayan Tandoori Naan and spread evenly, leaving outer edges bare

Divide sauced turkey, mozzarella, blue cheese, and red onion evenly between the Tandoori Naans

2 tbsp Brown sugar
½ tsp Yellow mustard
Salt and pepper to taste

Directions

In a large skillet over medium heat, brown ground beef, celery, onion, carrot, garlic, salt and pepper breaking up the beef until it's browned and no pink is present – approximately 6-8 minutes

Add tomato paste, brown sugar, vinegar, mustard and water; mix well

Bring to a boil, reduce to simmer and cook for 15-20 minutes until sauce thickens and flavors meld

Remove from heat; taste and adjust seasonings

Divide evenly among the Smart Pockets and serve immediately
