Quiche Stuffed Bagels

A clever way to fill up the inside of your bagel without making it a sandwich.

Yields3 Servings
 3 Toufayan Bagels of any kind
 2 Eggs
 6 tbsp Heavy cream
 ½ cup Cooked crumbled bacon
 ¾ cup Cheddar cheese, grated
 ½ Small red onion, finely diced
 ½ tsp Kosher salt
 Fresh chopped chives, for serving

Pre-heat oven to 375F.

Split each bagel in half and and use a paring knife to gently remove the inner-core of each bagel half and place on baking sheet.

In a medium bowl whisk eggs with heavy cream and add bacon, cheddar, onion and salt. Mix and evenly pour inside each bagel half.

Bake bagels for 12-15 minutes until quiche is set.

Remove from oven and sprinkle with chopped chives.
