What makes a product gluten-free?
Gluten is a combination of proteins found in several cereals including wheat, barley, spelt and rye. Many people also eliminate oats on a gluten-free diet, although oats do not contain gluten in themselves, they are processed in a way that causes them to pick up gluten through cross-contamination.
As such, there is now a specialist market for gluten-free oats that are harvested and processed in an environment to ensure they do not experience cross-contamination. To be gluten-free and safe for someone with celiac disease to eat, a gluten-free product must contain less than 20ppm of gluten.
To achieve this, many gluten-free alternatives to conventional gluten-containing products must not only replace all gluten-containing ingredients but must also be produced in an environment that doesn’t handle them.
What is celiac disease?
Whilst we are here it’s important to note that the gluten-free market originated out of necessity to cater to those with celiac disease. celiac disease is an autoimmune condition caused by the presence of gluten which leads to the sufferer’s immune system attacking healthy tissue resulting in serious side effects.
It’s estimated that 1 in every 100 people suffers from celiac disease but only 30% are formally diagnosed. Symptoms of celiac disease can range from the mild to the sever and can also come and go which can make it very difficult for people to realize they have the condition. Some of the most common symptoms of celiac disease include:
- Diarrhea – which is caused by malabsorption because the body cannot absorb nutrients properly with a damaged gut.
- Abdominal pain – such as stomach cramps and bloating, which also often comes with excess flatulence
- Constipation – some sufferers experience the opposite of diarrhea and will feel constipated instead.
- Fatigue – tiredness is often caused because of iron deficiency and B12 anemia
- Weight loss – caused because the body cannot properly digest and absorb nutrients from food.
- Skin conditions – because those suffering from celiac disease are in a constant state of immune response they may also see rashes and skin conditions, especially on their elbows, buttocks, wrists and neck.
Once diagnosed with celiac disease the only cure is to lead a 100% gluten-free lifestyle which means cutting out all gluten-containing products and also limiting all exposure to cross-contamination. If celiac disease is not treated then the body will slowly attack and eat away at healthy gut tissue causing serious malnourishment issues.
Given that only 30% of 1 in 100 people are diagnosed celiac disease, it is not responsible for the sudden boom in gluten-free products and this is instead caused by the rapidly growing number of people suffering from gluten-intolerances and those choosing to cut gluten out of their diet t aid weight loss or for other health reasons.
It’s estimated that 15% of the US population is gluten intolerant and many of the symptoms are similar to that of celiac disease, though intolerance is not an immune disorder. Those with gluten intolerance may experience digestive issues, such as gas, bloating, diarrhea or constipation, their joints may feel achy and sore, they may feel tired and fatigued, experience headaches or migraines and even experience mood issues such as anxiety, depression and ADD.

BFree offers two different wraps the first made primarily from quinoa and chia seed and the second using sweet potato flour. Recently I haven’t been able to find your tomato-flavored gluten free wraps, and this afternoon I’ve been dismayed to discover that it’s not mentioned on your gluten-free-wraps page. *Please* tell us when it will return!!!
Thanks for your comment, Irv. We’re sorry to say that the Sundried Tomato Gluten Free Wraps have been discontinued. They may still be available in some stores as they phase out, but we have no plans to bring them back. Please try one of the other varieties of Toufayan Gluten Free Wraps.
That’s really disappointing to “hear,” because I had found their flavor to be outstanding. And yes, I have tried the spinach version, don’t like it at all, and cannot understand why, if something had to be dropped, spinach survived instead of tomato. I will continue to buy the “original” for now, but will be actively searching elsewhere for some other, more interesting flavor.
