Loaded Tot Foldover
An amazingly satisfying sausage, egg, tot, and cheese foldover, great for any time of the day!

Bake tater tots in the oven, according to the package directions (go for crispy if you can).
In a large frying pan, warm the butter and coat the pan (use a non-stick skillet if you want to skip the butter). Add the sausage crumbles and cook over medium heat, stirring occasionally, until the sausage is fully cooked and nicely browned. Set the sausage aside but the keep the pan warm.
Lightly beat an egg and spread over the warm pan. Place one wrap over the egg and cook over low heat until the egg is cooked throughout.
Using a large spatula, flip the wrap so the egg is on top and fill with half the sausage, tater tots, cheddar, onion.
Fold the wrap in half and set aside.
Using the other egg and wrap, and the rest of the sausage, cheese, onions, and tater tots, make another folded wrap.
Top each foldover with salsa and sour cream. Garnish with chives.
